Zucchini Fritters by Monica
These zucchini fritters are full of flavor! With zucchini, parmesan cheese, mozzarella cheese, and fried on a griddle (or pan-fried) in Bacon Up, they are fresh and crispy, with layers of flavor. Perfect as a snack, appetizer, or side dish!
Ingredients
FOR THE ZUCCHINI FRITTERS:
- 3 tablespoons of Bacon Up Bacon Grease
- 2 cups of shredded zucchini - squeezed dry about 2 large zucchini or 1.5 pounds of zucchini
- 1 cup of Panko bread crumbs
- 2 eggs
- ⅓ cup of fresh grated parmesan cheese
- ¼ cup of finely shredded mozzarella cheese
- 2 garlic cloves
- Salt
- Fresh cracked black pepper
FOR THE OPTIONAL YOGURT SAUCE:
- 1 cup Greek yogurt
- ½ small garlic clove minced
- 1-2 teaspoons chopped dill
- Salt to taste
Instructions
FOR THE ZUCCHINI FRITTERS:
- Grate zucchini on a box grater, on the side with larger holes, and transfer grated zucchini into a mesh bag or cheesecloth. Squeeze out as much liquid as you can!
- Transfer squeezed zucchini into a mixing bowl and add remaining ingredients. Mix well until all ingredients are thoroughly incorporated.
- Preheat a griddle or large cooking pan over medium heat and lower the temperature a little bit. Add Bacon Up and use an ice cream scoop (or a smaller scoop) to scoop out eleven amounts of zucchini mixture. Gently shape the fritters with your hands and place onto the griddle or into the cooking pan.
- Cook for 4-6 minutes on each side, depending on the size of the fritters. Try to only flip once so there is less chance of them breaking apart.
- Note: if cooking more than one batch of fritters at a time, you may need to add a little more Bacon Up to the pan between batches.
FOR THE OPTIONAL YOGURT SAUCE:
- Stir garlic, dill and salt into Greek yogurt, mixing well. Chill until served.

Notes
- This recipe is very easy to make gluten free! Simply switch out the standard Panko bread crumbs for gluten-free bread crumbs (preferably ones that resemble Panko in consistency).
- Be sure to squeeze out as much liquid from the shredded zucchini as you can before mixing it with remaining ingredients. Too much moisture will lead to soggier fritters.
- To avoid fritters falling apart, be sure to add bread crumbs, eggs, and cheese - these serve as binders in the mixture.
- Fritters may also fall apart if they are stuck to the pan, so be sure to use enough Bacon Up and not to flip the fritters too soon or too frequently. Using a non-stick griddle or cooking pan can also assist in this regard.
