Tomato Soup with Bacon Up
Tomato soup is classic comfort food and a family favorite. We’ve found that starting with a scoop of Bacon Up Bacon Grease to cook the onions and garlic adds a base layer of flavor that takes the soup to the next level. Here’s a tomato soup recipe from our friend, Darryl, of “Cooking with Darryl” fame, and we love everything about it! We’re so happy that he has allowed us to share it with you - enjoy!

Equipment

  • Large pot or Dutch oven
  • Blender

Ingredients

  • 2 Tablespoons Bacon Up
  • 1 onion sliced
  • ¼ cup chopped garlic
  • 2 28-ounce cans plum tomatoes
  • 2 cups vegetable broth
  • 1 12-ounce can tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ¼ teaspoon ground red pepper
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper freshly ground
  • pinch of sugar
  • ¼ cup fresh basil
  • 1 cup heavy whipping cream
  • fresh basil leaves for garnish
  • more black pepper to taste for topping

Instructions

  • In a large pot, melt Bacon Up over medium-high heat.
  • Add onion and garlic; cook for five minutes, stirring occasionally.
  • Stir in tomatoes, broth, and tomato paste.
  • Sprinkle garlic powder, oregano, red pepper, salt, and black pepper.
  • Cover and simmer for 20 minutes.
  • Stir in sugar and basil.
  • Transfer soup to a blender, and blend until smooth. (Monica’s note: Be careful not to overfill the blender to ensure hot soup does not splash out when blending. Also vent lid to allow heat to escape. I like to cover the vented lid with a kitchen towel to protect my hand – and kitchen!)
  • Return soup to the pot and stir in the cream.
  • In serving bowls, top with basil leaves and black pepper to taste.
