Mexican Street Corn
Mexican Street Corn from Bacon Up's CEO, Monica, is a quick and easy side dish that's a great addition to any dinner -- especially on Taco Tuesday or as a delicious side with any Mexican-inspired menu. Be sure to "start with a scoop" of Bacon Up for the extra layer of flavor that takes it to the next level.
Ingredients
- 2 tablespoons of Bacon Up Bacon Grease
- 4 cups of frozen or fresh corn
- ¼ cup of mayonnaise
- ¼ cup of sour cream
- Juice of one lime
- 1 teaspoon of ground cumin
- ½ teaspoon of chili powder
- ½ cup of cotija cheese
- ¼ cup of cilantro or green onions
Instructions
- Melt Bacon Up in a skillet over medium-high heat. Stir in corn. Cook just until corn in heated through, stirring often
- Stir in mayonnaise, sour cream, lime juice, cumin, and chili powder
- Add half of the cotija cheese, stirring until melted.
- Sprinkle the top with the remaining cheese and garnish with a dash of chili powder and cilantro, lime, and/or green onions.

PRO TIPS:
During the summer, using fresh corn right off the cob is especially delicious!
Adjust to your family's preference by adjusting the amount of red pepper flakes, or adding cayenne, etc.
