Greek Chicken and Veggies Sheet Pan Dinner by Monica
My family loves this Greek Chicken dinner because it is delicious. I love it because a sheet pan dinner is fast and easy to prepare – and I can get other things ready while it’s in the oven. And a bonus: everyone can choose what they like from the pan– so I can please everyone with just this one dish!
Equipment
- 1 Sheet pan large/sturdy
- 3 Mixing Bowls 1 small for marinade, 1 to mix/coat chicken, 1 to mix/coat vegetables
Ingredients
- ½ cup Bacon Up heated for about one minute
- 1 lemon, juiced about 3 tablespoons
- 4 garlic cloves, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- 6 chicken thighs bone-in, skin-on
- 1 medium zucchini halved lengthwise and sliced
- 1 yellow bell pepper chopped into 1-inch pieces
- ½ large red onion thinly sliced
- 1 pint cherry or grape tomatoes
- ½ cup kalamata olives pitted OPTIONAL
- 3/4 cup feta cheese
- 2 tablespoons fresh parsley finely chopped
Instructions
- Preheat the oven to 425°F.
- Whisk together the melted Bacon Up, lemon juice, garlic, oregano, thyme, Dijon mustard, salt and pepper.
- Place the chicken thighs in a bowl, pour ⅔ of marinade over chicken and toss with hands, coating entirely. Allow chicken to marinate 10-15 minutes. Wash hands or remove and dispose of gloves, if used.
- While marinating the chicken, put the vegetables into a separate bowl, pour remaining marinade over vegetables and toss with hands, coating entirely.
- Spread the vegetables evenly across the sheet pan, then add the chicken thighs, distributing them evenly across the pan and ensuring everything is in a single layer.
- Bake for 30 minutes, remove from the oven to add the olives and feta cheese, then bake for another 10-15 minutes. The dinner is finished baking when the vegetables have softened and the chicken reaches 165°F internally.
- Before serving, garnish with the fresh parsley.
