Chicken and Steak Fajitas by Monica
Fajitas are the ultimate customizable dish! But no matter which meats, veggies, and toppings you choose, you can take it all to the next-level by grilling in Bacon Up® Bacon Grease. Even the tortillas will taste better warmed in some Bacon Up. Everyone will love fajitas the "Bacon Up Way"!
Equipment
- Shallow dish or bowl for marinade
- Large skillet or griddle (I prefer cast iron!)
- Serving bowl or platter
Ingredients
Ingredients to Fill Fajitas
- 1 pound flank steak or skirt steak
- 1 pound chicken
- 1 onion thinly sliced
- 3 bell peppers thinly sliced
- 1-3 tablespoons Bacon Up Bacon Grease
Ingredients for Marinade
- ¾ cup lime juice or about 3 limes, juiced
- ¼ cup Bacon Up Bacon Grease
- 4 garlic cloves minced
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- ½ teaspoon chili powder
- ½ teaspoon black pepper freshly ground
- pinch of cayenne pepper
Ingredients to Assemble/Serve Fajitas (feel free to serve with additional/other toppings!)
- tortillas
- sour cream
- guacamole
- pico de gallo
- fresh cilantro chopped
Instructions
- Add all of the marinade ingredients to a bowl or shallow dish and stir. Add the steak and chicken, toss to combine, and marinate for 1 to 4 hours.
- Heat a large skillet (or griddle) over medium-high heat with Bacon Up® Bacon Grease. Add the steak and chicken and cook for 3 to 4 minutes on each side. Remove the steak and chicken to a cutting board and let the steak and chicken rest for several minutes.
- While the steak and chicken are resting, heat the Bacon Up in the same skillet on medium-high heat. Add the onion and bell pepper slices and sauté for 4 to 5 minutes, stirring frequently.
- When the onion and bell peppers are just about done, slice the steak and chicken into long, diagonal strips.
- Add the steak and chicken back into the skillet, and stir everything together. Transfer to a serving bowl or platter.
- Add some more Bacon Up to the skillet/griddle to warm up tortillas in preparation for serving.
- Serve immediately with your favorite toppings, such as sour cream, pico de gallo, guacamole/avocado, and/or chopped fresh cilantro!
